No Bake Chewy Truffle Cookies Recipe
1 cup dried pitted dates (chopped up)
1 cup water
1 tablespoon lemon juice
2 tablespoons honey
2 tablespoons natural peanut butter
2 tablespoons unsweetened cocoa powder
1 tablespoon butter
1/4 teaspoon salt
1 1/4 cup whole wheat graham crackers, pulverized in food processor
1/2 cup old-fashioned rolled oats
Coconut oil for using on baking sheet.
For coating (optional): organic shredded coconut, granola, crushed graham crackers, chopped peanuts…approximately 1/2 cup of each
Combine the dates, water, and lemon juice in a pan.
Simmer over medium heat breaking up any large pieces of dates with a spoon, until it’s like a thick paste, (approximately 15-18 mins.)
Stir in the honey, peanut butter, cocoa powder, butter and salt until combined.
Stir in the graham crackers and oats.
Remove from heat.
Lightly brush coconut oil on baking sheet.
Drop round tablespoons of the cookie mixture onto the prepared baking sheet
Refrigerate til just chilled and set (approximately 20 minutes.)
If you’re coating them:
Place optional toppings in small bowls.
Roll each cookie in topping
Cover & refrigerate until firm.
