Easy Banana Bread Recipe & question

This morning I had 3 mushy overripe bananas on my counter…
which you would think “oh great, I can make banana bread” should’ve been my first thought.
It wasn’t!
See, I apparently am the oddball who loves bananas, hates banana bread!
You could not pay me to eat banana bread.
I have no clue why, but I just do not like it…
with nuts, without nuts, with chocolate chunks in it, without chocolate chunks, vegan, non-vegan (regular), with just bananas…
no matter what, I do not like it!
Which led to my wondering if I was the only one who felt that way, so I naturally turned to the experts and tweeted.
Needless to say, I am the only one who feels that way!
hmmmph…guess it’s a good thing my daughters father (a/k/a my ex) likes banana bread and we’re all traveling for his son’s wedding this week so need snacks.
Banana bread is on rack cooling as I type this recipe.
So, to those who actually eat this, here you go:

Easy Banana Bread

* 1 cup granulated sugar
* 8 tablespoons (1 stick), room temperature
* 2 large eggs
* 3 ripe bananas
* 1 tablespoon milk
* 1 teaspoon ground cinnamon
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon vanilla


Preheat the oven to 325 degrees F
Butter a loaf pan, I also put parchment paper on the bottom to make it easier to get out.

Cream the sugar and butter in a large mixing bowl until light and fluffy.
Add the eggs and beat well.

In a small bowl, mash the bananas. Mix in the milk, vanilla and cinnamon.

In another bowl, mix together the flour, baking powder, baking soda.

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.

Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean.

Set aside to cool on a rack for 15 minutes.

Remove bread from pan, invert onto rack and cool completely before slicing.
