Baked Zucchini Fries
1/4 cup whole wheat flour or coconut flour
2 TBSP water
2 cups Panko breadcrumbs
Salt & Pepper to taste
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1 lb zucchini–cut into approximately 4″ sticks
Preheat oven to 425
Line a baking sheet with parchment paper.
Place flour on plate or in bowl to dredge zucchini through.
Whisk eggs with 2 Tablespoons water in shallow dish or bowl.
In a bowl mix together the Panko, salt, pepper, garlic powder, and cayenne pepper.
Dredge the zucchini through the flour until well coated.
Dip the zucchini into the egg and then into the Panko, coating the zucchini slices on all sides.
Place the breaded zucchini on the baking sheet.
Bake 18-20 minutes, til golden brown.
Serve with dipping sauce (horseradish, ranch, whatever)
