Strawberry Crepe Recipe

Ingredients
* 1 cup all-purpose flour
* 2 eggs (I use organic free range brown eggs)
* 1/2 cup milk (I use organic milk)
* 1/2 cup water
* 2 tablespoons butter, melted (I used Earth Balance natural butter spread)
**Strawberries or any other fruit you want to put in the crepe
**Whipped cream (optional)
**Powdered sugar (optional)
Directions
-In a large mixing bowl, whisk together the flour and the eggs.
-Gradually add in the milk and water, stirring to combine.
-Add the melted butter; beat until smooth.
-Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Make sure the batter coats the entire surface evenly.
-Cook for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
For these, I simply cut up strawberries and put them inside the crepe and rolled it up then dusted lightly with powdered sugar, topped it off with some whipped cream and a few more sliced strawberries.
I know other recipes call for using cream cheese mixed with the strawberries but I didn’t see the point in it.
This was keeping it a bit lighter, fresher just using the fresh strawberries alone.
