What do you do when you’re craving something healthy, cool, refreshing, sweet, nutty and chocolaty?
Throw together frozen banana bites.
Similar to the old school frozen banana except these are in easy to eat bite size pieces!
Did you know that bananas are an excellent source of potassium which replenishes electrolytes, preventing muscle cramps. The carbs in bananas also help restore glycogen to your muscles giving you energy and enhancing protein absorption. So, see now you don’t need an excuse are justified in eating these. Not to mention the benefits of walnuts, cashews, coconut and dark chocolate 😉
You’ll need bananas, dark chocolate (or milk chocolate if you want-I prefer quality real organic dark chocolate), coconut (I used organic shredded coconut), and whatever nuts you want to use (I used walnuts and cashews, you can use whatever kind you want).
You could also use goji berries, blueberries, raspberries or whatever you want…
I used what I had on hand here already.
Simply cut the banana in slices
Crush the nuts
Melt the chocolate
Then dip the banana slices (one at a time) in the melted chocolate using a toothpick or fork (be forewarned though, the banana might fall off into the chocolate).
You can also place the banana slices on a plate and spoon the chocolate over them.
Once you dip one banana slice in chocolate, then dip it in either the coconut, nuts or whatever you’re dipping them in.
Place on plate and continue with the rest of the banana slices.
When you have all banana slices done, place them in the freezer for at least 30-45 minutes for the chocolate to set.

(note: when banana slices are frozen firmly, you’ll want to move them into a closed container so they don’t discolor for oxidation from being exposed to air)
