Chicken Veggie Rice Skillet Recipe

Chicken Veggie Rice Skillet Recipe

1 olive oil
1 1/4 pounds boneless skinless chicken breasts, cut into 1 inch pieces
1 tablespoon butter
1 pound (or as much/little as you want) of broccoli, red peppers, green peppers, mushrooms, onions (any other veggie you may want to throw in)
2 cups uncooked brown rice (or white, though brown is better for you)
1 cup shredded cheese (of your choice–cheddar, colby, jack, mozzarella-whatever)

Directions
–Prepare rice according to directions on bag.
Set aside

–In a skillet, heat oil over medium-high heat. Cook chicken for approx. 3 to 4 minutes, stirring occasionally.
–Add butter or a bit more oil to skillet and stir in vegetables. Cook for approx. 3-4 more minutes.
–Add the cooked rice and stir.
–Sprinkle with cheese.
–Remove from heat and serve.

Makes approximately 4 servings.
