Baked Zucchini

Ingredients
1 large Zucchini
1 eggs
3 Tablespoons Italian Seasoning
1 cup Gluten Free Flour or panko (I pulverized Whale Tails Chips (organic tortilla chips) instead and used 1/2 c chips, 1/2 c panko)
1/2 cup Fresh Grated Romano (or whatever cheese you want to use)
Directions
Preheat oven to 430 degrees
Slice Zucchini into thin slices
Mix flour, panko or pulverized chips and seasoning in bowl
Whisk egg in separate bowl
Coat Zucchini slices in egg then dredge through flour mixture
Place on cookie sheet (lightly grease with coconut oil)
Bake for 10 minutes
Add fresh grated cheese then flip over
Bake 10 more minutes
Serve
