Pineapple Zucchini Chicken- Clean Eating Recipe

Pineapple Zucchini Chicken- Clean Eating

Ingredients
2 large chicken breasts, boneless and skinless
1 (1o-12 oz.) container of salsa (I personally recommend Eat Wholly’s Wholly Salsa).
4 small raw zucchini sliced
1/4 of a fresh pineapple

Directions
Place chicken and salsa in crock pot on low for about 4-6 hours.
When the chicken falls apart easily you’ll know it’s done.

OR alternate way to cook chicken is in pressure cooker for those who don’t want to do it in crock pot.
Cook chicken in pressure cooker for approximately 30-35 minutes or until it falls apart easily.

Shred the chicken and mix in the zucchini and pineapple.
Serve

Makes approximately 4 servings.
