For lack of a better name, this is Tortillas Peppers Salsa
By now you’ve probably figured out I usually just toss things together and whooola there’s a meal.
Case in point, tonight’s dinner.
Peppers cut up (red, green, yellow)
Onion cut up
Cherry tomatoes cut up
approximately 2 Tablespoons Virgin Coconut Oil
Salsa (however much you want-I used Wholly Salsa)
*you can add anything you want, this is just what I used for tonight’s meal*
Slice the tortilla(s) into pieces
Warm a pan with the coconut oil in it.
Place the tortilla pieces in the coconut oil and cook til crisp.
Remove from oil and place on paper towel to drain.
After drained, place tortilla strips on plate.
In remaining coconut oil, stir fry the peppers, onions, cherry tomatoes for approximately 4-5 minutes or to your liking.
Place veggies on top of the tortilla strips.
Top with salsa.
